Good morning. Karyn I am sorry to learn that you are having a problem with your pie. Karyn, there are many many things that can go wrong with the type of pie you are baking. I cannot address all the possibilities today. However I will work with you till we both solve the problem.

Here is what I think you are doing incorrectly. Meringue pies will weep if there is condensation there. That event occurs when there is a disparity between 2 or more items with different temperatures that are enclosed together. Soooo, I feel you are most likely applying the meringue on top of a room temp lemon concoction. If this is so this is your baking problem. Place the hot lemon pastry right from the burners into the pie shell & then apply the meringue on top. Then quickly into the oven... only long enough to brown the top of the meringue. Also Karyn I might add it is important to apply the meringue all the way to the edge of the pie pastry. If this isn't the problem post back Karyn & we will go over the sequence together. This isn;t rocket science... just Baking science.
