I also have this same problem with the Coconut meringue Pie. I want to thank you for the last possible solution and I am also going to try it. I am known as the pie person in the family and it is hard to believe that I can't get this under my belt is also frustrating. I was thinking it was something I was doing wrong! I use a recipe just like the one listed. In Houston there are very rarely days that are not humid even in the winter. Again Thanks for the suggestion.
