BLUEBERRY PUDDING CAKE2 cups fresh or frozen blueberries 1 teaspoon cinnamon 1 teaspoon lemon juice 1 cup flour 1 1/2 cups sugar, divided use 1 teaspoon baking powder 1/2 cup milk 3 tablespoons butter or margarine, melted 1 tablespoon cornstarch 1 cup boiling water Preheat oven to 350 degrees F. Grease an 8-inch square baking dish. Toss blueberries with cinnamon and lemon juice; place in prepared baking dish. In a bowl, combine flour, 3/4 cup sugar and baking powder; stir in milk and butter. Spoon over berries. Combine 3/4 cup sugar and cornstarch; sprinkle over batter. Slowly pour boiling water over all. Do not stir.
