AMISH ACRES SHOO FLY PIE
"This old fashioned sweet molasses dessert comes from Amish Acres in Nappanee, Indiana."
1 1/4 cups all purpose flour 1/2 cup Brown Sugar, packed 1/2 teaspoon ground cinnamon 1/4 teaspoon salt 3 tablespoons cooking oil 3/4 cup boiling water 1/2 teaspoon baking soda 1/2 cup dark colored corn syrup 1/4 cup light molasses 1 egg, beaten 1 (9-inch) unbaked pie shell fresh currants (optional garnish) lemon peel curls (optional garnish)
Preheat oven to 375 degrees F.
In a small mixing bowl, combine the flour, brown sugar, cinnamon and salt. Mix in oil till mixture is crumbly; set aside.
In another mixing bowl, combine the boiling water and baking soda. Stir in the corn syrup and molasses. Let the mixture cool till just warm. Beat in the egg.
Sprinkle 1/2 cup of the flour mixture over the bottom of the unbaked pie shell. Carefully pour in the molasses mixture. Sprinkle remaining flour mixture evenly over pie.
Bake in a 375 degree Foven for 25 to 30 minutes or till the mixture is set. Let cool on a wire rack. Store in the refrigerator.
If you like, garnish with fresh currants and thin lemon-peel curls before serving.
