Good afternoon. There are more than one reason why a cheesecake collapses in the center. I will just mention the two that are mostly likely the culprit. The oven temperature is to high. In the mixing process you beat the concoction at a too high speed. In other words you beat too much air into the concoction. one other thing my friend a cheesecake is not a cake....it is a custard & thus must be treated like one. If you wish you can post your recipe for just the filling & the directions you employed & I will scrutinize it for you. Good luck & have a nice day.
