PUMPKIN-APPLE STREUSEL MUFFINS
3 cups flour 2 1/4 cups sugar 1 tablespoon plus 1 teaspoon pumpkin pie spice 1 1/2 teaspoons baking soda 3/4 teaspoon salt 1 (15 ounce) can pureed solid-pack pumpkin (not seasoned pie filling) 3 large eggs 1/3 cup vegetable oil 2 small apples, peeled, cored and finely chopped FOR THE STREUSEL: 1/4 cup sugar 2 tablespoons flour 1/2 teaspoon cinnamon 2 tablespoons butter or margarine
Preheat oven to 350 degrees F. Grease or use paper cups to line 24 muffin cups.
Combine flour, sugar, pumpkin pie spice, baking soda and salt in large bowl; set aside.
Combine pumpkin, eggs, vegetable oil and apples in medium bowl; mix well. Stir into flour mixture just until moistened. Do not overmix; some lumps are OK. Spoon batter into prepared muffin cups, filling 3/4 full.
HOW TO MAKE THE STREUSEL: Combine sugar, flour and cinnamon in medium bowl. Cut in butter with pastry blender or two knives until mixture is crumbly. Sprinkle over muffin batter.
Bake for 30-35 minutes or until wooden pick inserted in center comes out clean. Cool in pans for 5 minutes; remove to wire racks to cool slightly.
