ORANGE OATMEAL CAKE
1 1/2 cups fresh orange juice 1 cup quick cooking oats, uncooked 1/2 cup butter or margarine 1 cup granulated sugar 1/2 cup brown sugar, firmly packed 2 eggs 1 tsp. vanilla 1 3/4 cups sifted flour 1 tsp. baking powder 1 tsp. baking soda 1/2 tsp. salt 1/4 tsp. ground cinnamon 1 tbsp. grated orange peel 1/2 cup chopped black walnuts Orange Delight Topping (recipe follows)
In a small saucepan bring orange juice to boiling point on medium-high heat: pour over oats, stir well and set aside.
In large bowl of electric mixer cream together margarine and sugars until light and smooth. Add eggs, one at a time, beating well after each addition. Add vanilla. Set aside.
Sift together flour, baking powder, baking soda, salt and cinnamon. Add alternately with oats to creamed mixture. Stir in grated peel and nuts. Pour batter into a greased 1 3 x 9 x 2-inch baking pan.
Bake in a 350 degree F oven for 40 minutes or until done. Remove from oven and turn on broiler.
Spread cake immediately with Orange Delight Topping. Place under broiler unit for 1 to 2 minutes or until topping is bubbly.
ORANGE DELIGHT TOPPING
1/2 cup brown sugar, firmly packed 1/4 cup butter or margarine 1 tbsp. grated orange peel 1 tbsp. orange juice 1 cup flaked coconut 1/2 cup chopped black walnuts
In a small saucepan combine sugar, margarine, orange peel and orange juice. Bring to a boil on medium heat and cook 1 minute, stirring constantly. Add remaining ingredients and stir until blended.
