TOFFEE DIAMONDS
1 3/4 cups all-purpose floor 1 cup sugar 1 cup (2 sticks) I Can’t Believe It’s Not Butter! Spread Unsalted or Regular, softened 1 tsp vanilla 1 large egg, separated 1/2 cup walnuts, finely chopped
Preheat oven to 275 degrees F. Grease 15 1/2 by 10 1/2-inch jelly-roll pan.
Into large bowl, measure flour, sugar, I Can’t Believe It’s Not Butter!, vanilla, and egg yolk. Mix at low speed until blended. Increase speed to medium; beat until well mixed. Pat dough evenly into jelly-roll pan.
In cup with fork, beat egg white slightly; with pastry brush, brush over top of dough. Sprinkle with walnuts.
Bake 1 hour and 10 minutes or until golden.
Cut diagonally immediately after baking. Remove from pan. Cool on wire rack.
