CANADIAN TEA BISCUITS2 cups biscuit mix (such as Bisquick)
2/3 cup flour
1/4 cup sugar
1/4 teaspoon ground nutmeg
1 egg
2/3 cup sour milk or buttermilk
1/4 teaspoon baking soda
1/2 cup chopped raisins*
Butter or margarine (for tops)
In a 2-quart mixing bowl, stir together baking mix, flour, sugar and nutmeg.
Put egg and milk into a smaller bowl and whisk with wire whisk to combine well. Stir in baking soda and, all at once, pour the mixture over the flour, working it into a smooth dough. Work in raisins.
Pat dough into an 8-inch square baking dish coated with vegetable cooking spray. Score with a sharp knife into 9 equal squares.
Bake at 425 degrees F in a glass dish (450 for a metal pan) for 15 minutes or until nicely browned.
As soon as you remove the baking dish from oven to cool on a wire rack, brush the tops of each square with a dab of butter to keep crusts soft.
*You also can add 1/2 cup well-chopped pecans or walnuts in addition to or instead of the raisins.
Makes 9 large tea biscuits
