ORANGE OATMEAL MUFFINS
2 medium oranges 2 cups Bisquick baking mix 1 cup quick-cooking oats 2/3 cup chopped walnuts 1/2 cup sugar 1/4 cup vegetable oil 1 teaspoon vanilla 1 egg
Heat oven to 400 degrees F. Grease generously 18 muffin cups, 2 1/2 x 1 1/4 inches, or line with paper baking cups.
Quarter unpeeled oranges and remove seeds. Put orange quarters into food processor and process only until orange rind is finely chopped (do not let rind become "mushy").
Mix oranges and remaining ingredients. Divide batter among muffin cups.
Bake until light golden brown, 15 to 20 minutes.
High Altitude Directions (3500 to 6500 feet): Heat oven to 425F.
