SPICY PEAR UPSIDE-DOWN CAKE
4 pears, peeled, cored and sliced SUGAR MIXTURE: 1/3 cup sugar mixed with 1 tablespoon flour and 1/4 teaspoon each ground cinnamon and ground nutmeg FOR THE BATTER: 3 tablespoons butter or margarine 1/2 cup sugar 1 egg 1/2 cup buttermilk 1 cup flour 1/2 teaspoon baking powder 1/2 teaspoon vanilla 1/4 teaspoon baking soda 1/4 teaspoon salt 1/4 teaspoon ground cloves 1/4 teaspoon ground ginger 1/4 teaspoon ground nutmeg Topping (recipe follows)
In greased 8x8x2-inch baking pan mix pears and sugar mixture, then smooth in even layer; set aside.
To make batter, cream butter and sugar until fluffy; beat in egg and buttermilk, then flour, baking powder, vanilla, baking soda, salt, cloves, ginger and nutmeg. Pour over pear mixture, sprinkle with Topping.
Bake in preheated 350 degree F oven 30 to 35 minutes or until pick inserted in cake layer comes out clean and pears are tender. Cool slightly. Cut in squares and serve warm.
TOPPING: 2 tablespoons butter or margarine, softened 1/4 cup flour 1/4 cup packed brown sugar
With pastry blender or fork cut butter into flour and brown sugar until mixture is crumbly.
