If you want a very easy to follow quick sauce, there is something out called Mrs. Wages. They have several easy to follow packets of seasonings that only require you to add tomatoes. I have used these recipes for chili sauce, salsa, and spaghetti. You can use these to can or freeze. I typically can my sauce.
However I have my own recipe that is from scratch. Unfortunately I don't have any measurements. Dice up one large onion and about 3 large green peppers. Cook these in some oil unitl soft in a large stock pot. I make about 10 quarts of tomatoe puree using fresh tomatoes and a 'Victorio Food Strainer'(found at k-mart anywhere from 35$-40$)a must for making tomatoe sauce at my house. This takes the skin and seeds from the meat of the tomato so you will end up with a pure tomato puree. I use roma tomatoes, but you can use any type. If using round tomatoes core and quarter them. Put tomatoes in boiling water for about 3 min. befor putiing through strainer. Put the purree in with the vegetables. Mince one to 2 cloves of garlic, add italian seasonings(to taste) and 2 small cans of tomatoe paste to help thicken the sauce. Bring sauce to a boil stirring often. Turn heat to med-low and cook for about 6 hours or until sauce has reached a nice thickness. Good luck. i hope you like it. My mom and i both use this and it makes every pasta dish a real treat.
