USE EQUAL AMOUNTS OF SUGAR AND CIDER VINAGAR
(ENOUGH TO COVER YOUR BEETS)
EX. 2 CUPS SUGAR
2 CUPS VINAGAR
1 TABLESPOON PICKLING SPICES
BRING THIS MIXURE TO A BOIL
THEN ADD BEETS ( I USE CANNED BEETS WHEN I
AM IN A HURRY AND JUST NEED A FEW)
OR USE COOKED BEETS
BRING TO A BOIL AND COOK 5 MIN.
PLACE IN JARS
COVERING TO 1 INCH OF THE TOP OF THE JAR
AND SEAL
NOTE...WHEN YOUR COOK FRESH BEETS,
LEAVE ABOUT 1 INCH OF THE GREEN STEMS
BOIL UNTIL DONE...TEST WITH A KNIFE...
THEN PEAL THE SKIN OFF....IF YOU DON'T
LEAVE THE STEM, THEY WILL BLEED
AND LOSE THIER COLOR
