This is my mom's recipe:

Make a syrup of 1 part sugar to 2 parts vinegar, pour this hot over chopped banana, frying, salad, or bell peppers and seal the jars. She never waterbathed or pressure cooked hers, but I always pressure can mine. I bring the cooker up to 5 lbs pressure for 5 minutes.
