I'm a Master food Preserver in California. The food saver will not create an environment that is safe. While it does create a vacuum the vacuum isn't the result of a heat process. The internal temperature of the product being canned must reach a specific temperature to create a good seal and a safe product. Each high acid product requires a different processing temperature and a different processing time to create a proper vacuum and a safe product.
The food saver is great for dehydrated foods.
