Hope this one is of use Jane, similar to Linda's Green Tomato Wine
4 lb green tomatos 1 quart balm leaves inc. stalks 1 lb raisins, sultanas or cuurrants. 1 lb maize, barley or wheat 2 lemons or oranges ( half an ounze of citric acid may be used instead) 3 lb sugar 1 gallon water half a pint cold tea Activated yeast and nutrient.
Soak grains overnight.
Scald the dried fruit and pass grains, leaves and staks together with the tomatoes, dried fruit, and fruit rinds (no pith) through a mincer.
Place the minced ingredients in the fermenting jar and add sugar.
Pour boiling water over this and stir well to dissolve sugar.
When cool add cold tea, fruit juices or citric acid, activated yeast and nutrient.
Ferment for seven days then strain into glass jars.
Fit air lock, ferment and rack in the normal way.
