While the recipes are pickled with vinegar, the ph level of the crabapples is still high enough to can them without adding the vinegar. I don't have a recipe for them without the vinegar, sorry, but you can add whatever spices you want, add corn syrup if you wish, along with sugar and water and process for 20 min. just as you would regular apples.
