Hi Kay, I thought I would post it up here. Hopefully, you will be checking this message board. We use Fleischman's unsalted margarine with a lot of success in our baking. I also use 1/4 cup soft tofu pureed to substitute for 1 egg in a recipe. I have sugar, choco chip, ginger and other recipes. Here are two. Please post if you want more. Whole Wheat Sugar Cookies 1 cup sugar 1 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 1/2 tsp. cinnamon 1/2 cup margarine 2 tbsp. milk 1 tsp. vanilla 1/4 cup pureed soft tofu 2 cups whole wheat flour 2 tbsp. sugar and 1/2 tsp. cinnamon Cream sugar and margarine. Add milk, vanilla, tofu. Combine flour, baking powder, baking soda, salt, 1/2 tsp. cinnamon. Add to creamed mixture. Roll balls of dough in sugar/cinnamon mix then bake on pans for 9 minutes at 375F. The Bestest Chocolate Chip Cookies 2 cups margarine 3/4 cup light brown sugar 3/4 cup white sugar 1 tsp. vanilla 1 tsp. water 1/2 cup pureed soft tofu 3 1/2 cups sifted flour 1 tsp. baking soda 1/2 tsp. salt 2 cups chocolate chips Beat together sugars, margarine, vanilla, water and tofu. Sift flour, soda and salt. Add to creamed mixture. Stir in chocolate chips. drop by tsp. on pans and bake at 350F for 10-12 minutes. ---------------------------------------------------------------------- If you are not able to get the margarine I mentioned, then check out the Crisco site and just substitute the eggs with the tofu in the recipes.
