Frogmore Stew

2 gallons water, approx.
4 Tablespoons Old Bay Seasoning or equivalent
1 medium onion, chopped
2 lbs smoked sausage, cut into 2 inch lengths
5 ears corn, halved
3 pounds shrimp

Bring water to a boil in a large pot and add seasoning,
onion and sausage. Return to boil. Add corn
and return to boil until done, about 15 minutes.
Add shrimp, stirring often, until they turn just pink,
about 4 minutes. Do not overcook the shrimp! Drain
and serve with butter or cocktail sauce on table
covered with newspaper for easy cleanup. Eat with
your fingers and use paper towels like people in Frogmore do.
Mmmmmmmmmmmmmmm, good.

Our family omits the onion and substitutes small red
potatoes.
