Hey now! I am delurking to give a stuffing we made last year and loved a lot. I hope you try it and thank you all so much for the wonderful recipes everyone has shared! Love, Beth Cranberry Cornbread Stuffing 1 large onion, chopped-about 1 C 1 C celery, chopped 4 T butter or margarine 12-16 ozs. corn muffins or cornbread 16 oz can whole berry cranberry sauce 1-2 tsp Bell's seasoning for poultry orange juice, optional 1/2 C walnuts or pecans, ground or finely chopped, optional. Saute onion in butter 2-3 min add celery, cook til crisp-tender. Add to crumbled cornbread. Add seasoning, cranberry sauce, and nuts if you are using them. Mix lightly. If too dry add orange juice. Place in greased 2-2 1/2 quart casserole. Cover & bake in preheated 350 degree oven 45-60 min.
