I haven't tried this recipe, but I'd love to hear from anyone that does!

Tofu mincemeat

1 lb tofu
4 green apples
3 cups apple juice
1/2 cup butter
1 1/2 cups raisins (mixed black, gold and currants)
1/2 cup sugar
1 tablespoon cinnamon
1/2 teaspoon mace
1/2 teaspoon allspice
1 cup brandy

Freeze the tofu overnight, then let thaw and shred it. Core and chop
the apples. Melt the butter in a pot, then add the everything but the
brandy. Cook over low heat until the apples are very soft and most of
the liquid is absorbed, about 45 minutes to an hour. Add the brandy,
then store in a large sterilized jar in the refrigerator for a month
or two.

This makes two pies, although I often use the second pie's worth for
filled cookies at Christmas time.
