I just got this yesterday from one of the newsgroups. Hope this helps. ~~Billie
The basic mix consists of:
1/2 cup instant coffee
1/2 cup cocoa powder (Fry's)
1 cup sugar
1 cup non-dairy creamer
To this, you can add any of the following:
1 tsp mint extract
1 tsp coconut extract
1 tsp almond extract
1 tsp rum extract
1 tsp vanilla extract (or use a vanilla bean - you'll have to leave it
for a few weeks for the flavour to develop)
Put all of the ingredients into a blender and process on high for a
couple of minutes. The blending process is what makes it look and taste
like the commercial stuff.
Orange flavored coffe mix
1/2 cup instant coffee
3/4 cup sugar
1 cup powdered milk
1/2 tsp. dried orange rind
Mocha
1/2 c instant coffee
1/2 c sugar
1c powdered coffee creamer
2 tbsp. unsweetened cocoa
Cinnamon
1/2 c instant coffee
2/3 c sugar
2/3 c powdered milk
1/2 tsp. cinnamon
Instructions: You can substitute the appropriate amount of artificial sweetener
for sugar in any of the mixes.  The label in the sweetener
usually will tell you the equivalent of the amount of sugar. 
Powedered creamer also can be substituted for the milk.  To make 1 cup of
coffee use 2 rounded teaspoons full of the mix into a cup, fill
with hot water.  Store in airtight container.
MOCHA MIX
1 CUP DRY MILK
3/4 C SUGAR
2/3 CUP NON DAIRY CREAMER
1/3 CUP UNSWEETENED COCOA
1/3 CUP INSTANT COFFEE PRESSED THROUGH A SIEVE
1/4 TSP CINNAMON
1/4 TSP SALT
1/4 TSP GROUND NUTMEG
COMBINE ALL INGREDIENTS IN A AIRTAIGHT CONTAINER WITH A COVER.  Makes about 3
1/4 cups of 10 to 12
servings.  For a single serving use 1/4 cup mis to 3/4 cup boiling water.
