NORWEGIAN CHRISTMAS COOKIES
1 c. butter -- room temperature 1 c. sugar 1 egg -- separated 1/2 tsp. cinnamon 2 c. all-purpose flour 1 c. finely chopped walnuts or pecans
Cream butter, sugar and egg yolk until light; mix in cinnamon. Add flour and beat to blend. Press dough on lightly greased sheet until 3/8 inch thick. Beat egg white and brush on dough. Scatter nuts on top and press dough out again to 1/8 to 1/4 inch thick. Bake at 375 degrees for 15 to 20 minutes. Remove from oven and mark into 1 to 1 1/2 inch squares. Cool. Store in airtight canister.
NORWEGIAN KRINGLE
1 cup sugar 1 cup sour cream 3 cups cake flour 1 teaspoon salt 1 teaspoon cinnamon 3/4 teaspoon soda 1 ounce chocolate (optional)
Dissolve sugar in sour cream. Sift flour, salt, cinnamon and soda together and combine with cream and sugar. Melt chocolate, if desired, and add. Drop by 1/2 tsp. onto a greased cookie sheet. Bake at 350 for 20 minutes.
Makes 72 cookies.
