Here is a real good pumpkin bread my Mother-in-law made forThanksgiving for many years.
Pumpkin Bread Recipe By : Charlotte's recipe file
3 cups sugar 3 cups all-purpose flour 1 1/2 teaspoons salt 1 teaspoon cinnamon 1/2 teaspoon cloves 1/2 teaspoon nutmeg 4 large eggs -- beaten 1 can pumpkin puree (17 oz.) 1/2 cup canola oil 3 tablespoons water 2 teaspoons baking soda 1 cup nuts 1 cup raisins
Sift together first six ingredients into large mixing bowl. Make well in center. Add eggs, pumpkin and oil to dry ingredients and mix well. Mix water and soda and add to mixture. Flour nuts and raisins lightly and add to batter. Bake in two loaf pans or one tube cake pan at 325 to 350 degrees until tests done. One loaf may be frozen for future use. Applesauce may be used instead of pumpkin.
