I love this and so does my family. I fix it for Thanksgiving every year and get rave reviews:
SWEET POTATO CASSEROLE/JR LEAGUE THE JR LEAGUE OF SOUTH BEND, INDIANA Serving Size : 12
2 cans Sweet potatoes (16 oz size) 1/4 cup Butter 1 cup Sugar 1/2 teaspoon Salt 2 Eggs 1/2 cup Milk 1/2 teaspoon Vanilla 1 cup Brown sugar 1/4 cup Butter 1/3 cup Flour 2 teaspoons Cinnamon 1 cup Nuts-chopped
1. Heat sweet potatoes to boiling and drain. Mash potatoes with butter. Add sugar,salt, eggs, milk, and vanilla and mix well. Pour into ungreased 9-inch square glass baking pan.
2. Mix brown sugar, butter, flour, and cinnamon with fingertips until mixture is crumbly. Stir in nuts. Spread on top of sweet potato mixture and bake at 350 deg. F for 40 minutes.
This dish maybe made the day before and refrigerated before baking. It's very rich, but everyone loves it!
