This recipe is one I have used for years, as did my mother before me. It's similar to the one I read, but there are a few differences.
Mexican Wedding Cakes
2 sticks butter or margarine (I use one of each) 6 tablespoons powdered sugar 1 teaspoon vanilla 2 cups flour 1/2 to 2/3 Cup ground walunts (I use a 6 oz. bag of walnut pieces, ground up)
Soften butter in a bowl, add vanilla and powdered sugar and mix well. Add ground nuts and mix well, then add flour and mix well. I do all mixing by hand. Dough will be quite dry. Form into approx. 1" balls, place on baking sheet and flatten slightly.
Place close together on sheet. These cookies do not rise or spread so you can put them very close together.
Bake at 325-350 until bottoms are lightly browned and tops are firm to the touch, not hard.
Take cookies from baking sheet a few at a time while hot, and shake in powdered sugar until well coated. Place in storage container and enjoy at will.
