Many thanks! Sorry to be so late checking for further messages, BJ. I really appreciate your additional recipes and the explanations on ingredients. After reading your comments, I found a Mazola margarine that is not diet and not dairy, so I am over the "butter" hurdle, thanks to you. I may neet to stick to the potato-starch egg substitute, though--My grandson also tests allergic to soybeans, but his parents have found that he tolerates soy as a minor ingredient quite well. We are a little unsure about using tofu as a major ingredient. Apparently there is some evidence that a positive test for soy may in some cases really be a cross reactivity from his peanut allergy. So he may not actually be allergic to soy; they plan to have him tested further. He's six, and has not started to grow out of his allergies yet--but we are hopeful!
