Scalloped Potatoes with Cheese and Vegetables

Make a white sauce with:
1/2 cup margarine, melted
1/2 cup flour
milk, add to desired consistency. You can also use evaporated milk, adding a can of water, or half and half, depending on how rich you want it to taste.

When white sauce is done stir in:
2 cups grated cheddar cheese

Spray a large casserole pan or turkey pan with cooking spray.

Place in pan:
10 potatoes or more, sliced (I slice my potatoes in my cuisanart thin)
1 onion, diced
Optional additions:
chopped broccoli (fresh, frozen, or leftover)
chopped thick ham (saute in brown sugar to brown a bit and for flavor)

Bake 1 1/2 hours in 350 degree oven. I bake mine uncovered to brown, but it is up to you.

Notes:
I sometimes add chicken bouillon to my white sauce.
I sometimes throw in a can of mushroom soup and fresh mushrooms.
Try out different vegetables, can't go too wrong.

My recipe makes alot, so cut it way down if just a few of you. My boys and husband like leftovers.
