Basic Cream Cheese Cookies

1/2 cup shortening
3 oz. pkg. cream cheese
1/3 cup sugar
1 egg yolk
1 1/2 tsp. orange extract
1 1/2 cups sifted flour
1/2 tsp. salt
Cream shortening and cheese until soft. Gradually add sugar until light
and fluffy. Add egg yolk and orange extract, mix well. Sift flour and salt
together, add in 3 additions.
Shape dough into a roll, wrap in plastic wrap, chill about 1 hour.
Assemble and fill cookie gun, set cookies onto pans. Bake 6-8 min. at 400*

Variations:

Mocha Cookies-Substitute 1 tsp. vanilla for the orange extract, add 2 Tbsp. each
of cocoa, instant coffee powder to flour.

Raspberry-Nut Cookies-Substitute 1 tsp. black walnut extract for orange extract, add 2 Tbsp red respberry jelly with egg yolk and extract.

Eggnog Cookies-Substitute 1 1/2 tsp vanilla for orange extract, add 1/2 tsp ground nutmeg to flour (Personally, I would use some rum extract, or lightly brush on a rum glaze)
