This is a receipe our family has used for special occasions. Chicken, Pork, Rice Casserole
Brown 1 - 1-1/2# bulk sausage. Remove meat from pan. Saute in remaining pork fat, 1 coarsely chopped onion, 1 large green pepper cut in attractive pieces, 1/2 c celery. Drain off fat. Put above ingredients in oven proof casserole. Add to casserole: Equal amounts of cooked diced chicken (1 - 1-1/2 #) 1 cup raw rice and 1/4 cup raw wild rice 1 can cream of mushroom soup 1 can cr. of chicken soup 1 can mushrooms 1 med jar (not small) diced pimiento 1 cup grated cheddar cheese
Bake 325 degrees 1 to 1-1/2 hours Serves 6 to 8
