A great way to roast a turkey. I usually follow the general directions for thawing and time recommended. However I stuff the bird with fruit and herbs. First season the cavities with coarse salt and freshly ground pepper. Then slice in half tangerines, oranges, apples, lemons, limes or grapefruit (or a mixture of any or all of these. Also include bunches of fresh rosemary, thyme & sage. You can also add garlic and onion if you so choose. Stuff cavities with all of these ingredients. Slide your hand under skin of bird and season with salt and pepper then place more fresh herbs under skin. You may have to use a toothpick to hold skin if you tear it. Rub bird with herbed olive oil. You may also add some herbed vinegar (pineapple sage is good). And roast as directed. You won't need to baste alot the fruit keeps the bird moist. My family loves it when I make it this way.
