Hi Denise, I, too, was searching everywhere for a recipe for madeleines, and I'm amazed to find the basic recipe, with all of it's variations, here on this website. I don't know if this is helpful or not, but I found the best quality authentic madeleine pans at Williams-Sonoma. They sell two different sizes (medium and large.) The pans are not cheap, however, they are non-stick and they work very well. You can order them via catalogue or walk into the Williams-Sonoma store at any major city in the U.S. About the sponginess problem - I don't know what causes that - perhaps you are at an altitude which calls for an adjustment to the recipe..? Hope this all helps! Good luck, sincerely, Amy M.
P.S. I'm fairly new at this computer thing, too. |
