Hi Denise,
I, too, was searching everywhere for a recipe for madeleines, and I'm amazed to find the basic recipe, with all of it's variations, here on this website. I don't know if this is helpful or not, but I found the best quality authentic madeleine pans at Williams-Sonoma. They sell two different sizes (medium and large.) The pans are not cheap, however, they are non-stick and they work very well. You can order them via catalogue or walk into the Williams-Sonoma store at any major city in the U.S. About the sponginess problem - I don't know what causes that - perhaps you are at an altitude which calls for an adjustment to the recipe..? Hope this all helps!
