Hi Sue - I have also been looking for recipes for Oyster Stew. This one looks to me to be the most flavorful sounding, but haven't tried it yet. Always wanted to try Oyster Stew so bought a pint of fresh oysters and hubby and I will try it next week for Thanksgiving. Good luck. Shari, Wisconsin
-----OYSTER STEW----- 4 whole Shallots, minced; 6 tablespoons Butter, divided; 1 pint Oysters w/Liquid; 2 cups Milk; 2 cups Whipping Cream; 1/2 cup dry Sherry; Salt and Pepper to taste. Saute shallots in 4 tablespoons butter for 5 minutes. Add oysters with liquid. Bring to a boil; boil til oysters curl. Add milk, cream, salt and pepper. Simmer for 2 minutes. Add sherry and again bring to a boil. Serve at once with a pat of butter on top of each serving. (Serve with Parmesan Cheese Toast.)
