Hi Earleen,

If we can't find the exact recipe, here's one that I found in my files that you may be able to adjust. I haven't tried it, so I would 'give it a spin' before giving or serving it to anyone. If the cream cheese/pudding mixture works out it would be fun to experiment with other pudding flavors. Actually with this recipe coconut pudding would be tasty with the pineapple. Another thought is to omit the pineapple and use chocolate pudding and mini chocolate chips in the mixture then roll in chopped nuts, cocoa powder or chocolate sprinkles. I suspect that sugar free pudding could also be used, but a whole box of it may be too sweet.

Mix together:

2 (8 oz) packages of cream cheese
1 (3 oz) package of instant pudding
1 (8 oz) can of crushed pineapple, well drained

Shape into a ball. Refrigerate overnight.
