When I was a kid, I used to make this all the time. My recipe simply was made using a regular Peanut Butter cookie recipe and using jams instead of jellies. Jams are a thicker substance than jelly and jelly will also "melt" when heated as opposed to jams. They usually turn chewy or hard if heated too long. make the cookies as you normally would, then before they go into the over, make a thumbprint in the dough and fill with your favorite jam, then bake for soemthing like 8-10 minutes at 350 degrees. Also, if you need a sweenter and sugar is too grainy for your need, like spaghetti sauce, use a 1/4 cup of grape jelly. You can also make sauces using sprimp cocktail sauce and grape jelly.

p.s., this is not a new recipe. It has been in my family for at least 50 years, when they came from Ireland.
