Hi Sue, I have not tried these recipes but they are from Amish and Mennonite cook books. I hope these will be helpful.
Oyster soup 1 quart milk 1 pint oysters 2 Tbsp butter 1 tsp. salt 1/8 tsp. pepper 1 Tbsp.minced parsley or celery leaves
Bring milk to boil in the top of double boiler. Add salt. Brown the butter in a sauce pan. Add Oysters one at a time to the butter. Add the Liquor from the oysters to the hot milk. When both the oysters in the butter and the milk are at the boiling point, pour oysters and butter into the milk. Add parsley flakes or celery leaves and serve.
Oyster Stew 3 pints milk 1 pint water 1 scant Tbsp. salt 1- 10 oz. oysters 3 Tbsp. butter Combine ingredients and bring to a boil. Let boil a few minutes. Add oysters keep over heat for a few minutes but do not boil, then reduce heat and let stand untill oysters come to top. Then use low heat 5 0r 10 minutes longer or untill oysters disappear from the top. Add 3Tbsp butter. Serve with crackers.
