Asparagus with Lemon Herb Sauce Bon Appetit - serves 8
3 cups chicken broth 1 1/2 pounds asparagus, thin 2 tablespoons olive oil 1 1/4 cups green onions, chopped 1/3 cup shallots, minced 1 teaspoon sugar 1 tablespoon garlic, minced 1 1/2 tablespoons Dijon mustard 1 tablespoon lemon juice 1/2 teaspoon lemon peel, grated 1 teaspoon fresh thyme, minced 1/2 cup sweet red peppers, minced Bring broth to boil in large pot. Add asparagus and cook until crisp tender, about 4 minutes. Using tongs, transfer to large bowl of ice water. Reserve 1 cup broth in small bowl. Drain asparagus, pat dry. Heat 1 tablespoon oil in medium non stick skillet over moderate heat. Add 1 cup green onions, shallots, sugar. Saute until onions and shallots are tender, about 5 minutes. Add garlic, saute 2 minutes. Stir in reserved broth, 1 tablespoon oil, mustard, lemon juice, thyme and lemon peel. Simmer until slightly thickened and liquid reduced, about 5 minutes. Season with salt and pepper. Cool to room temperature. Arrange asparagus on platter. Spoon sauce over. Sprinkle with remaining green onions and bell peppers.
