Here's a recipe I found in a parish cookbook.

4 eggs
2 sticks (1 cup) margarine
3 tsp almond extract
1 C sugar
1/2 tsp baking powder
1 C flour
1 tsp oil
12 oz chocolate chips
Seedless raspberry jam
Yellow, red, green food color

Beat eggs, add sugar, almond extract and margarine. Beat in flour and baking powder. Mix well. Divide batter into 3 equal portions. Add 2 to 3 drops of food color to each portion. Bake in 10 1/2 x 7 1/4 in greased pans in a 350 degree oven for 8 to 10 minutes. Do not brown. Cool well. In a separate pot, melt 12 oz chocolate chips with 1 tsp oil. Layer each cake with raspberry jam (thin layer). Coat
top of cake with melted chocolate chips, cool completely, turn over and coat the other side. Cut, at room temerature, into squares.
