Recipe(tried): Simple Easter Brunch Recipes
Breakfast and Brunch Here's some I've used for several brunch occasions - including Easter. I could give you a TON more but they get more complicated - there's already some brunch casserole recipes posted - I have three different ones I use if you don't see one you like. Depending on how many people you're having, you might just add on a tray of assorted mini muffins and quartered bagels. Quiches are always yummy too and can usually be prepared ahead of time. Hope these help!
Tangy Fruit Salad - always a HUGE hit
1 can (20 oz) pineapple chunks, juice drained and reserved
1 pkg. (3.4 oz) instant vanilla pudding mix
1/4 c. dry orange flavored breakfast drink (Tang)
1 can (11 oz) mandarin oranges, drained
1 can (16 oz) fruit cocktail, drained
2 bananas, sliced
2 apples or pears, cut into chunks
1 c. sliced fresh strawberries (optional)
In a small bowl, combine reserved pineapple juice, pudding mix and breakfast drink; set aside. In a large bowl, combine all the fruit. Fold juice mixture into fruit. Refrigerate before serving.
Sausage Gravy
1 lb. sage sausage
2 tbsp. finely chopped onion
6 tbsp. flour
4 c. milk
1/2 tsp. poultry seasoning
1/2 tsp. nutmeg
1/4 tsp. salt
dash worcestershire and tobasco
Cook sausage in a large pan. Add onions and cook until transparent. Drain all but 2 tbsp. of drippings. Stir in flour (coat meat). Cook for about 6 min. until bubbles. Add milk and seasonings. Stir until thickened. Simmer to ensure heated throughly. Serve over biscuits.
Pigs in a Blanket
1 tube (8 oz) refrigerated crescent rolls
1 pkg. (12 oz) smoked sausage links
Separate the dough into eight triangles. Place a sausage on wide end of each triangle and roll up. Place, tip down, on an ungreased baking sheet. Bake at 400 for 10-15 min. or until golden brown.
