This recipe is difficult to give exact amounts, so bear with me. My mother always saved out a few mashed potatoes before she seasoned them. With the plain mashed potatoes, you add enough powdered sugar to make a dough that will roll without being sticky. Roll out as thin as you want. Then spread with peanut butter, either creamy or chunky. Roll up jelly roll fashion, wrap in waxed paper or plastic wrap and refrigerate. Slice thin when ready to serve.
