Hi Sandra - Okay here's what I got - it turns out this is a Polish traditional recipe so I hope it's what you're looking for:
She calls it her Easter concoction - no real recipe. But here is what she does (from her e-mail)...
VEAL LOAF:
I double this recipe since I like it leftover... 3 lbs ground veal (Usually have to order this special) 6 large eggs Bread crumbs Parsley (I use alot - almost whole bunch since I love parsley)
Mix all above together. Mixture should be moist, yet firm enough to form into a round loaf. I usually eyeball the bread crumb amount - around 1 cup I think. You don't want it too dry, but it should be firm enough to hold shape. Bake for about 1 hr uncovered in 350 oven. Cool and cut in square bite size pieces.
For rest of meal I cut into bite size pieces the following:
Hard boiled eggs (about 1 dozen) Cheese ( I use 2 kinds usually - an yellow and a white) Baked ham cut into chunked cubes Smoked Kielbasa (cut into slices)
Mix all above together with veal loaf and serve with mustard and beet horseradish.
