Apricot Filling
1 (11 oz.) pkg. dried apricots 3/4 c. sugar
Chop apricots into 1/4 inch pieces and place in a saucepan. Add just enough water to cover apricots and cook, uncovered, over low heat (about 225 degrees) until apricots are soft. Remove from heat and stir in sugar. Makes 2 1/2 cups filling.
Apricot Filling
3 large can apricots, drained and put through blender 1 c. sugar 3/4 c. cornstarch
Combine sugar and cornstarch, add to blended apricots and cook until thick and clear. Cool. This is excellent for cookies or rolls and this tastes better than already prepared filling that you purchase in stores.
