Rebecca, this recipe is from a friend's Mother many years ago when I was a teenager. I loved them! I hope it is what you are looking for. The recipe ingredients list was given to me and I had to do the rest myself. They are delicious!

Empire Cookies

1/2 cup shortening
1/2 cup butter
1/2 cup sugar
2-3 cups flour
1 tsp. Baking powder
1 egg, beaten

Beat the shortening and butter together until creamy. Add sugar and mix well. Add the baking powder to 2 cups of the flour and then add to the butter mixture. Add the egg and mix well. Add more flour a little at a time until you can roll out the dough. Roll out dough and cut in circles with a 2 or 2 1/2-inch circle cookie cutter or a glass dipped in flour before cutting each cookie. Bake on an ungreased cookie sheet at 350F for about 10 minutes or just until light golden brown on top.
When cool put Jam (I use homemade raspberry jam) between two cookies. I ice the top of the cookie but I'm sure that you could put just powdered sugar.
