Thanks for asking dear Kim. This recipe is from Deb & dear Betsy published it in a Newsletter many years ago. Since them I had prepared it hundreds of times and people consider it as good or better than the very expensive Bailys.
Copycat for Bailys Irish Cream
1 2/3 Irish whiskey 1 cup heavy cream 1 can condensed milk 1 tsp vanilla extract 2 tsp chocolate syrup 1 tsp almond extract 1 tsp instant coffee ( Disolve this with a scant amount of hot water first)
Add all ingredients to blender and blend on low for one minute. Store in refrigerator.
This was one of the first drinks that my mother taught me how to prepare. It is a ladies beverage and one of our favorites.
Christmas Coconut Rum Eggnog (Coquito) Servings 5 cups
1 cup coconut milk 1 cup sweetened condensed milk 1 cup evaporated milk 2 cups white rum, or to taste 1 cup water 3 cinnamon sticks 6 egg yolks, well beaten 6 egg whites well beaten 1 cup cream (Avoset Cream or other whole cream) ground cinnamon for garnish 1 tb vanilla (optional)
Combine all of the milks and the rum in a blender or a food processor. Set aside. Boil the water with the cinnamon sticks. Cool to room temperature. Discard the cinnamon sticks. Combine all of the ingredients except the ground cinnamon and beat well in a blender or food processor in batches. Pour the eggnog into glass bottles and refrigerate until ready to use. To serve, use liquer glasses or Martini glasses.
