Egg Nog Punch
64-oz. Egg Nog, chilled 1/4 cup firmly packed light brown sugar 2 tbsp. dry instant coffee 1/4 tsp. ground cinnamon 1/2 cup coffee liqueur, optional 1/2 cup bourbon or brandy, optional 1 cup whipping cream 1/4 cup powdered sugar 1 tsp vanilla extract Additional ground cinnamon
In large mixer bowl, combine egg nog, brown sugar, coffee and cinnamon; beat on low speed until sugar and coffee are dissolved. Stir in coffee liqueur and bourbon if desired; chill. In small mixer bowl, beat cream with powdered sugar and vanilla until stiff. Pour egg nog into punch bowl; top with whipped cream and cinnamon. Refrigerate leftovers. -----------------------------------
Eggless Eggnog Serving Size: 8
1 quart Low-fat vanilla frozen yogurt or ice cream 1/2 cup Evaporated skim milk 1/4 cup Dark rum 1/2 tsp. Fresh nutmeg grated
In a pitcher, whisk together the yogurt, the skim milk and the dark rum. Cover and chill approximately 30 minutes. Sprinkle with nutmeg before serving.
