Hello Holly,

This isn't exactly what you described but the closest I can find so far...

Mother’s Japanese Fruitcake
Source: Cookbook USA

1 cup melted butter
4 eggs, beaten
2 cups sugar
3 1/2 cups flour
1 cup milk
1 cup raisins
1 cup blackberry jam
1 cup nuts
1 tsp. spice
1 cup fig preserves
1 cup cherries

Combine butter, eggs, sugar then alternately add flour and milk. Beat well then stir in raisins, nuts, jam, spice and crushed fig preserves. Bake in round or square pans until done.

FILLING:
2 cups sugar
1 cup water
2 lemons, grated
1 cup orange juice
1 cup coconut

Cook sugar and water several minutes then add other ingredients and pour over cooled layers. Place cherries between cake layers and on top for decoration.
