Chinese Sweet-and-Sour Meat Balls
1 1/2 lb Ground beef 2 tsp Salt 1/2 tsp Pepper 2 Eggs 4 tbsp Flour 1 cup Oil 3 Green peppers diced 1 1/4 cup Beef broth 1 1/2 cup Pineapple chunks 3 tbl Cornstarch 1 tbl Soy sauce 1/2 cup Cider vinegar 1/2 cup Sugar
Mix together the beef, 1 teaspoon salt and the pepper. Shape into 24 balls. Mix together the eggs, flour and remaining salt. Dip the meat balls in this batter.
Heat the oil in a skillet and brown the meat balls over low heat. Remove meat balls and reserve. Pour off all but 2 tablespoons oil. Add the green peppers, broth and pineapple.
Cook over low heat 10 minutes. Mix together the cornstarch, soy sauce, vinegar and sugar. Stir into the mixture and cook until thickened. Return meat balls and cook over low heat 5 minutes.
