Cranberry Farfel/Ferfel Kugel (P, KLP, TNT) Source: Netanya Hoffman Recipe author: unknown Servings: 6 to 8
4 cups matzo farfel/ferfel 1 can cranberry sauce* 4 eggs. beaten 2/3 cup oil 1/2 cup sugar 2 tsp. vanilla 1/2 tsp. cinnamon
Pour cold water over farfel, and drain. Mix with remaining ingredients together.
Bake at 350F for 1 hour.
*You can use either kind of cranberry sauce, but I use whole berry.
**Sometimes I forget to rinse the farfel, it doesn't seem to make a difference.
Variations: - Add a handful of fresh cranberries.
- Add frozen mixed fruits, and canned crushed pineapple.
- Substitute home made cranberry sauce.
- Omit 1 egg and adding a can of crushed pineapple.
- Cut the oil and adding some dried fruit, soaked in orange juice.
- Substitute noodles for the matzo farfel for a year round version.
