MASHED POTATO CANDY 2 1/2 cups sifted XXX sugar 3/4 cup cold mashed potatoes 4 cups flaked coconut 1 tsp. almond extract
Mix together in large mixing bowl. Form into walnut sized balls, dipping hands in XXX sugar to keep from sticking. Place on waxed paper and let dry while preparing chocolate coating.
CHOCOLATE COATING:
4 whole sq. unsweetened chocolate 1.3 of 5 x 2 1/2 x 2 1/2 block paraffin wax (food grade) 6 oz. pkg. chocolate chips
Melt in top of double boiler until smooth. Dip balls in chocolate, then place on wax paper to cool. Makes about 60 candies. These taste a lot like Peter Paul Mound bars.
