I make stuffing as much as a week ahead and freeze. Also, sweet potato casserole, potato casserole, broccoli casserole, mushroom/cheese quiche (to cut into appetizer-sized portions). That way, I have time to make bread/rolls the day of dinner. Also, grilling the turkey or chicken saves the oven space. I freeze my cheesecake the week or two before dinner too. That way, I can focus on cleaning house..ha...without pulling my hair out.
